Wine Review: This very dark garnet colored "Old World" styled Cabernet Sauvignon from Chile opens with a fresh cut cedar and black currant bouquet with hints of pencil shaving and black olive. On the palate, this wine is medium bodied in integrated medium plus acidity. The mouthfeel is balanced, round, and a bit rustic. The flavor profile is a bay leaf and black currant blend with notes of green olive and graphite. I also detect hints of red plum, tobacco, and oolong tea. The finish is dry, and its dusty tannins linger nicely. This Cab paired well with my beef bourguignon. Enjoy - Ken
