Wine Review: This midnight purple colored Cabernet Sauvignon from Paso Robles opens with a very fragrant blackberry and black currant bouquet with hints of violet and black licorice. On the palate, this wine is medium bodied with plus acidity. The mouthfeel is balanced, round, zesty, and bright. The flavor profile is a slightly tart black plum and black licorice blend with notes of blackberry and black olive. I also detected hints of black pepper, vanilla, oak, and a touch of balsamic. The finish is dry, and its dusty tannins stick around for a while. I would decant this Cab for a bit before pairing it with a marinated and grilled flat iron steak. Enjoy - Ken
