Wine Review: This dark ruby colored Cabernet Sauvignon from Paso Robles opens with a cedar and black plum bouquet with hints of oolong tea. On the palate, this wine is medium plus bodied with notes of medium plus acidity. The mouthfeel is balanced, round, bright and fresh. The flavor profile is a black currant and red plum blend with notes of mocha and black tea. I also detected some hints of oak, black cherry, and baking spices. The finish is dry and its dusty tannins build-up and stick around for quite some time. I would pair this Paso Cab with Italian braciole. Enjoy – Ken
Winemaker Notes: The 2021 Quarry Cabernet Sauvignon dances in the glass with aromas of red currant, plum, black olive, and anise. The mouthfeel is supple and polished, with vivid layers of cherry, boysenberry, blackberry, and tobacco. Notes of vanilla cream, coffee and cinnamon linger deep into the finish with fresh acidity and chalky tannins.
